This variety grows on the Halkidiki Peninsula in northern Greece. The sea climate, the rays of full sun, and the fertility of the soils give impressive and tasty olives. This famous Greek olive is plump, fleshy, and has a unique flavor: fruity, salty, buttery, and pleasantly sour. Green Chalkidikis olives are olives harvested at “young age” (before they are fully ripe) in mid-September. Then they delight with colors – from straw yellow to light, golden green. And if they are allowed to grow up, then they turn black. Perfect for salads, as an appetizer that sharpens the appetite, or for barbecue skewers.
